Du Yên은 Đường số 10의 2층짜리 상가 건물을 차지하고 있다. 1층은 동네 바람이 드나드는 개방형 공간으로 전통적인 분위기로 꾸며져 있으며, 저녁 열기가 가시지 않는 날에는 냉방이 갖춰진 2층 좌석을 이용할 수 있다. 미슐랭의 주목을 받은 곳으로 — 리뷰어들 사이에서 그 추천이 자주 언급된다 — 하지만 이 주방은 미슐랭의 이름에 기대지 않고도 충분히 주목받을 만하다. 확고한 채식주의자는 물론, 처음에는 가볍게 들렀던 잡식주의자들도 예상보다 훨씬 자주 다시 찾게 되는 레스토랑이다.
이곳의 요리는 중부 베트남 스타일을 기반으로 하되, 간혹 태국풍으로 변주하기도 한다. 이러한 다양성 덕분에 Du Yên은 일반적인 채식 레스토랑보다 훨씬 깊이 있는 메뉴를 갖추고 있다. 속을 파낸 가지 안에 밥을 담아 내는 가지 볶음밥은 고소하고 향긋한 풍미로, 이 레스토랑을 대표하는 시그니처 메뉴로 자리 잡았다. Hue 케이크는 다양한 속 재료를 넣어 만든 소담한 크기의 쌀가루 찜 요리 모음으로, 주방이 중부 스타일에 능숙함을 여실히 보여준다. 노루궁뎅이버섯 뚝배기도 나름의 마니아층을 거느리고 있으며, 연꽃잎 스프링롤은 섬세한 플레이팅으로 제공되어 주방이 비주얼에도 진지하게 임한다는 것을 느끼게 해준다. 대부분의 메뉴는 요청 시 완전 비건으로 조리 가능하여, 처음 보는 것보다 훨씬 유연한 구성을 갖추고 있다.
Thao Dien에 오래 거주한 이들 사이에서 가장 자주 거론되는 비교 대상은, 도보로 가까운 거리에 위치한 고급 비건 레스토랑 Hum이다. Du Yên은 플레이팅의 완성도 면에서는 한 단계 아래이지만, 맛에서는 그 격차를 상당 부분 좁히고 있으며 가격도 Hum보다 저렴하다. 이러한 균형이 바로 일회성 방문객이 아닌, 외국인 가족과 현지 직장인, 건강을 중시하는 단골들로 꾸준히 자리가 채워지는 이유다. 모든 요리는 주문 후 조리되어 따뜻하게 나오며, 식사의 흐름은 여유롭다. 일정이 빡빡한 경우라면 미리 연락해두는 것이 현실적인 선택이다. 매일 오전 9시부터 오후 10시까지 운영되어 하루 종일 이용 가능하며, 오전에는 한산하다가 저녁 시간대에는 분주해진다.
We sampled several dishes (didn't get around to capturing them on camera). The dishes were decent but overly sweet for our liking. Would like the fried rice if it was not so sweet! The flavors failed to leave a lasting impression. The cost was somewhat high in comparison to other places offering more flavorful options. Somewhat let down by the experience!
Michelin recommended vegan restaurant in d2 of Saigon. Got the crispy rice , eggplant fried rice and the hue cakes, which is an assortment of steamed rice flour with various ingredients.
Mostly Vegan menu. Ask the server to veganize your dishes. We ordered the Vegan Lions-Mane Mushroom Claypot, Crispy Chow Fun dishes, and a pot of steamed rice which blew our minds once their food touched our tongues. It was AMAZINGLY well prepared with Central Vietnam style. MUST MUST MUST try.
