I definitely recommend this place for a personal fine dining experience. This is the 2nd Michelin star restaurant I’ve been to. My husband and I sat at the round table near the kitchen/food preparation area. Tung is a super smiley and friendly person. We spent an hour talking to him after our dinner. We left him a big tip! Unfortunately we forgot to ask his Instagram for keeping in touch. I felt that the staff were on a very personal level. Liam (I think that is his name) is also very friendly. We have already recommended this place to several friends. We definitely will be back here when we are in HCM again.

the best fine dining restaurant in vn. and the best meal i’ve ever had in vn…maybe also in a long while. this was such an awesome dining experience at a michelin star restaurant in saigon. well-deserved. so proud that we have a proper fine dining restaurant in vn that isn’t gimmicky or a fad. the food was fusion and very creative and tasty with so much little details. interesting flavors. every dish made me want more of it. especially the lobster amuse bouche was 🤯. the sweets were okay. the service was wonderful. the place was pretty with a lovely garden and nice decor inside. my only complaint was the open counter kitchen room is super super cold (they lent me a scarf).

I went into Ciel with some skepticism, having been disappointed by more than a few Michelin-starred and World’s Best restaurants, but this completely exceeded expectations. Easily one of the best meals I’ve had this year. From the first bites, the precision was obvious. The tartelette shells and pie tees in the amuse showed serious technical mastery, perfectly crisp, delicate, and intentional. Seasoning across the menu was dialed in, with a seamless balance of salt, fat, acidity, and umami. Pacing was thoughtful, service was polished without being overbearing, and every detail, from consistently filled glasses to clear, engaging explanations, was handled with care. What really stood out was Chef Nguyễn Việt Hồng’s voice. The dishes draw from multiple cuisines but feel personal rather than derivative, refined, expressive, and technically precise, with every element working in harmony. Ciel is now a must visit for me in Saigon. Huge congratulations to Chef Hồng and the entire team, this is exceptional work. Highly recommend. Also, they have two cats so they very much deserve 3 Michelin stars.
Truly a great experience and the Danish and french influences can be felt, while still making Vietnamese food. The decor is modern and minimalistic. We went through the tasting menu and accompanied wine menu. And already from the first bite, we knew, we where in for an experience. And the pared sake was perfect. Our waiter was attending and precise, not a spot was left unattended, our glasses was always full. Now there is always room for improvement. All the dishes leading up to the lemon palette cleanser was amazing. The main dishes didn't quite live up to starters. The dove was very nice, but the 2 sauses didn't stand out from each other and the dish could use som acidity. But that is maybe just our palette. The wine pairing was for the most part really god, but especially the different sake stod out and most where god pairing to the dishes. All in all an amazing experience and worth going out of your way to go there.
