Ordered a hard noodles, but turned out it’s soft .. when I review to the staff she said because I was going to the toilet when the bowl came out so it softened the noodles already. But in fact I just went to wash my hand and came back :) Not a great answer:) Anw, the food was pretty good, a 8.5/10 to me. Recommend reservations before you come

Danbo Ramen Thao Dien - Ramen restaurant in Thao Dien, District 2, Ho Chi Minh City
About This Place
Danbo Ramen sits on Xuân Thủy and has earned its standing through volume and consistency: 466 Google reviews at 4.6 stars, and a line long enough that the restaurant eventually upgraded to a larger space. The tonkotsu broth is the anchor — dense, creamy, and described by regulars as reliably flavorful bowl after bowl. Chashu pork arrives tender, and the table condiments are worth attention: bean sprouts dressed in sesame oil integrate cleanly into the broth rather than sitting alongside it.
What distinguishes it from other Japanese spots in the neighborhood is the degree of customization at the order stage. Noodle firmness and saltiness are both adjustable, which matters — the default leans salty, and requesting a lighter version tends to produce a more balanced result for those sensitive to sodium. The spicy ramen has a dedicated following, typically ordered with soft-boiled eggs, nori, and extra green onions. Champong offers an alternative for diners not in a ramen mood, and it holds its own on the menu.
The format is efficient by design. Service is attentive and fast, and the menu — roughly five to eight ramen options — stays narrow enough to keep execution consistent. The dining room is compact even after the expansion, with bar seating that fills quickly on weeknights. Reservations are advisable; arriving at opening is the other reliable strategy. The room draws a cross-section: local Vietnamese regulars, expats, and Japanese diners who know what a credible bowl looks like.
Fried chicken earns mixed responses; gyoza and fried rice perform better as sides. The layout and pace make solo dining genuinely comfortable — bar seating suits it, and the kitchen's speed means no one lingers long over an empty bowl.
Reviews
This ramen is very nice if you're a bit drunk, eating sober and it feels a bit too salty
Visit there with my colleague as no choice for dinner on that dat but so hungry 🥲 This restaurant is very small and cozy. There is 2-3 table and bar. On that day, no table available then we sit at bar so I deduct 1 start as it’s very small and just my bias so if you’re not concerns about this point then you can ignore. They mainly serve with ramen and options is quite limit - around 5-8 ramen menu but I think it’s good to them to manage the quality and cost of operations. I order a spicy ramen by adding egg and gyoza. Ramen soup is salty for me but in the level that I still can eat and gyoza is very small but may be it’s relate with the price. Anyway, if they made a bigger gyoza and come with 2 pieces, it may support a felling when eat it … so I deduct the food score from this 2 points. I’m not sure if staff can speak English as my friend communicate with them to order then U don’t have a compliment for staff.
Good place, nice food, great service. Choose less salty will be suitable for Vietnamese taste. Reserve table or come early if you dont wanna be in long line
Great ramen place with so many different options. We wanted to try everything lol! 🙂↕️ With each ramen we can customise different things like the noodle tenderness and spice level, so it’s super specific to each person’s taste. There’s champong if you’re not in the mood for ramen, and it’s also very good! 👍 You should also explore all the additions on the table, like the bean sprouts which had sesame oil and goes great with the ramen. 🍜 The sides are amazing, we got pan-seared dumplings which were both crispy and chewy, so good. ❤️🔥🥟🥟🥟❤️🔥 The staff is super nice and we got great service. There’s tables for bigger groups upstairs or if you’re alone there’s counter seats at the ground floor. Parking is slightly limited but the security staff is very nice and will help you with the bike. Overall, super great option for a ramen craving 🔥
