Kashew Cheese Deli는 Thảo Điền의 주거 지역인 Trần Ngọc Diện에 위치한 그늘진 중정 복합 공간 안에 자리한다. 사이공 특유의 소음이 거의 들리지 않는 조용한 거리다. 이곳의 운영 방식은 독특하다. 메뉴를 구성하는 거의 모든 요소 — 캐슈 기반 치즈, pesto, 빵, 콤부차, 하우스 맥주 — 를 외부 조달 없이 자체 생산하며, 맛을 결정짓는 재료를 아웃소싱하지 않는다.
이곳의 4.7점 평점은 메뉴의 다양함보다 각 요리의 개성에서 비롯된다. 가지, 토마토, 치즈 pasta는 여행 마지막 날 다시 찾게 만드는 메뉴로 꼽힌다. Pesto panini는 자체 제작한 통밀빵 위에 캐슈 모짜렐라와 직접 압착한 pesto를 켜켜이 쌓아 낸다. 치즈와 처트니 샌드위치 — 캐러멜라이즈드 어니언, 선드라이 토마토, 하우스 치즈 — 는 주의 깊게 맛볼수록 진가를 발휘한다. 날마다 바뀌는 치즈 보드, 세 가지 색의 panini, 이른 오후가 되기 전에 매진되는 pizza가 세이버리 메뉴를 완성한다. 솔티드 카라멜 캐슈 디저트는 평소 디저트를 즐기지 않는다고 생각하는 이들마저 놀라게 한다.
테라스에는 다양한 손님이 꾸준히 모인다. 장기 체류 외국인, 베트남 전역에서 일주일을 조심스럽게 식사해온 끝에 이곳에서 비로소 안도감을 찾는 플랜트 베이스 여행자, 그리고 어느새 예상보다 더 많이 주문하고 있는 자신을 발견하는 일반 식사객까지. 중정 구조 덕분에 만석 상태에서도 분위기는 차분하게 유지된다 — 외부 녹지, 통과 차량 없음, 테이블 사이의 넉넉한 간격이 여유로운 두 시간짜리 점심을 편안하게 만든다.
Thảo Điền의 카페 씬에서 이곳을 돋보이게 하는 것은 생산의 깊이다. 주방은 외부에서 조달한 재료를 단순 조합하는 데 그치지 않고, 맛의 근간을 이루는 재료를 직접 발효하고 압착하고 굽는다. 그러한 수준의 통제력은 맛의 일관성과 세부적인 요소 — 빵의 결, 콤부차의 산미 — 에서 드러나며, 인근에서는 좀처럼 찾아보기 어렵다. 지하철을 이용해 방문할 수도 있다: 1호선 Thảo Điền역에서 도보로 가깝다.
The vegan cashew cheese here is exceptional. While some places just use a simple paste of soaked cashews, this one undergoes a proper process to achieve a sophisticated flavor. They offer a variety of flavors that are great on their own, but the sandwiches made with this cheese are truly delicious. Since they are quite filling, I usually choose a light drink, but you absolutely must try the cashew yogurt and mango smoothie—it's incredibly smooth and delicately flavorful!
Wow! An incredible culinary experience for me, a dedicated meat eater. I had the Pesto and mozzarella sandwhich on sourdough with sun dried tomatoes, and the mozzarella salad. The best vegan cheese I've ever had, albeit maybe 7-8 times total. I love caprese and this salad was comparable to a dairy caprese salad. Also the sour dough was crunchy enough to give the sandwhich the little bit of kick it needed to not be soggy, and the bread soaked up the pesto beautifully. I will be back to try the sourdough pizza next time. Great job!
I was very impressed with Kashew’s food innovation & twist in make all cheese from cashew and slow fermentation process (ricotta, mozzarella, and other varieties of cheese). They provided a sample of some of them and I was very impressed by their taste and selection of ingredients. Their dishes consist mostly of pizza, sandwich, pasta and salad using house made bakes as well. I was even more impressed by the service and the attention to details from the staff. They even brought a small basket for my bag without me asking. Nice small touches! Special thanks to Phuong
Great vegan place! I did find myself adding more salt to the dishes but overall they were nice. I had a really hard time deciding what to order since everything was tempting and looked good. I had a panini called La Vita Bella - great, aubergine and ricotta pasta - cute, and salted caramel rawberry cake which was simply okay. The spoon was cool looking so I give it extra credit. Not the cheapest but worth a visit.
We were looking for a place with good pizza & ended up being here. Unfortunately the pizza was sold out, we had spaghetti & sandwiches instead, but they were so good we didnt care about pizza anymore. We hadn't realized it was vegan food since everything tasted just great. The cashew cheese was awesome, I fell in love immediately🥰
