I appreciate so much that Saigon has a dedicated vegan sushi and plant-based Japanese destination, but this visit was such a major letdown that it actually made me sad. I desperately want every veg/vegan establishment to succeed, but they can't succeed like this. Things just devolved quickly when I was told they were already \"out\" of basics like avocado just 30 minutes after opening. It was the first red flag, the kind of minor glitch you overlook in the moment, not realizing it’s actually a window into the current state of things.Normally I’d be more forgiving, but if you’re asking for premium prices, that level of commitment has to be reciprocated. I couldn't order the makis b/c no avocado (in hindsight, I'm glad it wasnt available) ,so I started with the unagi sushi and vegan salmon sashimi with a bowl of rice, but the unagi was clearly old b/c it was dry and curled at the edges as if it had been sitting out for a while. I don't want to know for how long, but it gets worse...I heard the same server who brought me the food,  clipping her nails right in the dining room,  sitting by the kitchen entrance, foot on her lap. I tried to see if she washed her hands as she went behind the curtains to get my bill, but the view was blocked. I could see legs but the curtains cuts off from torso and up. When a staff member is that comfortable with such a repulsive habit in front of customers, it forces you to scrutinize every detail and...ofcourse the state of the bathroom is a good example - b/c it's the most honest place in any place - restaurant, home or anywhere period.  It doesn't matter whether it was 'cleaned' the night before or even before they opened (which if I had to guess - they didn't),  you can just tell they don't clean effectively which further confirmed my fears about their internal standards. For a place charging premium prices plus VAT and a service charge, they need to be much more buttoned up - I'd expect the place to have some reasonable standard for hygiene - I mean this should be true for all but it better be for places that charge like they do.  Vegetarian Japanese food and vegan sushi are so rare in the world, let alone in Saigon, and I genuinely wanted to support their mission, but the flavor is just \"okay to reasonably good\" when you apply the cost:value.  I still wanted to support their mission but  after what I saw the other day, I don’t think I could ever erase the image of that server holding her foot and clipping her nails in the dining room. I desperately want to believe she washed her hands but given the distance to the bathroom from the back and the time it took her to bring my bill, I doubt it.
