We got the ceviche which was more of a tartare as there was no oil base and no acidity. It was a fine dish but lacked flavour to me. I felt like the pomelo and fish flavours blended as both were super mild in flavour. The texture of the avocado didn’t help as it really made everything mush together in your mouth.\n\nThe octopus in the homemade sauce was out of this world. I would’ve drank the sauce if I could. The flavours were strong, spicy but tolerable and the octopus was cooked well!\n\nWe got the babaganoush which was creamy and light. We used the pitas in the octopus dish because that sauce was truly unbelievable. We also had the strawberry tart which is a must try! The crust was flakey and buttery and the dessert was not super heavy at all.\n\nThe reason I knocked a star off was for the ceviche dish and the vibe. The seating is fully outside (covered) so we had two big floor fans by us and my hair blowing in my face was annoying and it dampers the vibe for sure. I didn’t ask them to turn it off because it was hot and I agree necessary but maybe not two huge ones in front of our table. Would rate this higher if we could. It’s the end of our three weeks in Vietnam, and can absolute understand how it’s Michelin worthy. Our best restaurant experience by far. We loved looking into part of the kitchen - the chef was kind enough to present and explain some of the dishes, and show me around when I was clearly curious, and it’s clear how much care the whole team take. It is expensive by Vietnam standards, but unbelievably reasonable once seeing and trying the food; much of their produce comes from their own farm, and everything is exquisite. They have a gorgeous in house bakery I am hoping to try tomorrow! This was my second visit.\nI really enjoyed the menu here because many of the dishes are designed to pair well with wine. Depending on the season, they bring in rare wines from around the world. In addition to bottles, they also offer a wide selection of wines by the glass, and the sommelier recommends the best pairing for each dish. All the staff are kind and very professional.\n\nThe ceviche, cheese plate from Maison Béjo, and octopus ajillo were all excellent dishes to enjoy with wine. On my previous visit, I had the asparagus risotto (highly recommended!), but this time I chose the Pork Ragu Sauce Pappardelle as my main course. The pasta was absolutely delicious as well.\n\nFinally, I strongly recommend the Warm Madeleine for dessert. Topped with vanilla cream and banana-cardamom sauce, it was simply outstanding.
